Hi Bold Bakers.
Halloween is a time when you really get toput your skills to the test, both artistic
and baking.
I am going to show you how you can easilydecorate cupcakes for Halloween parties using
simple techniques.
So lets get baking.
So I have a lovely pumpkin recipe I want toshare with you that is going to be the basis
of our cupcakes.
We are going to start out own a large bowl.
Now the main ingredients for our cupcakesis pumpkin pure, but don't worry because I
did a Bold Baking Basics video about how tomake pumpkin pure at home.
It is really easy you just roast pumpkins.
our next ingredient is some flavorless oil.
Now I am using vegetable oil, but you canuse canola, coconut, and flower just don’t
use olive oil because it tastes too strong.
Next time add in some sugar, eggs, and vanillaextract and then just whisk all these ingredients
together.
Look at that gorgeous orange color from thepumpkin.
Now into this mix we are going to add outdry ingredients.
Put in your flower, baking powder, bakingsoda, cinnamon, ginger, and salt.
And gently fold these ingredients in.
Don’t you just love when you can make acake without using a machine.
You can just do it all into one bowl by hand.
Much easier.
Next you want to line a cupcake tin with wrappers.
It only takes around 12 because the recipemakes around 10 to 12 cupcakes.
Then go ahead and take a big spoon full ofcupcake batter and then fill each wrapper
around three quarters of the way up.
If you want to replace the eggs in this recipethen you want to check out my eggs substitute
chart.
That will tell you what to do.
But I would recommend something like applesauce or bananas will work really well.
Okay so we are all scooped and ready for theoven.
Bake your cupcakes off at 375 degrees Fahrenheitor 190 degrees celsius for roughly 20 minutes
or golden brown on top.
So I am all about easy decorating when itcomes to cakes.
Taking a plain old cupcake and transformingit into a show stopping Halloween cupcake.
That is what we are going to do right now.
I have these little cupcakes.
I am actually going to take off the wrapper.
Because we are not just going to decoratethe top we are going to decorate all over.
We are actually going to turn this cupcakeover and make his top as his bottom.
So I am just going to level off with a knife.
Little bumpy bit on the top just so when weturn him over just like that, he sits perfectly.
The frosting that we are using is butter creamfrosting, and I have a master recipe that
is on my website biggerbolderbaking.com.
Along with the recipes for the cupcakes too.
So you want to make some of this and I coveredit orange.
I find it easy if you just decorate him, fromthe top to the sides, and then with a spatula
just smear the top and the sides.
And what we are trying to do is create a roundlittle Jack o’Lantern.
And the way we are creating the lines in thepumpkin is going down straight, down the sides
of the butter cream frosting, to create thoselovely ridges.
So you can see he looks like a pumpkin butwe are going to make him into a Jack o’Lantern.
So here I have some butter cream I coloredwith black food die, I am just going to draw
on his eyes, and his mouth.
And then lastly to give you the full effect,I have a little bit of a pretzel here that
is going to be the stalk and I am just goingto pop that into the top.
And there you have a lovely Jack o’Lanterncupcake.
You do not need to be a master decorator tocreate these lovely little Halloween cupcakes
at home.
Okay I am going to show you another reallyeasy technique.
I have another little cupcake here with nowrapper on and I am just going to put some
butter cream frosting on his head.
And I am just going to create kind of a littlecone so it makes for really nice eating.
It doesn’t have to be perfect because weare going to cover him up.
What we are going to cover him up with issome rolled fondant.
So I go a circle here of rolled fondant itsnice and thin because you don’t want to
eat too much fondant.
Now I have this recipe on my website it isreally easy to make.
And you can also make marshmallow fondantthat will work really well too.
Now I am just going to place it on to in themiddle.
Just gently move the fondant down the sides.
And then just crinkle him a little bit.
To kind of create that wave that goes south.
Perfect.
Look at that.
An instant ghost.
Now just like my Jack o’Lantern I am goingto take my black butter cream and draw on
his eyes and his mouth.
Who would have thought with a little bit offondant and some black butter cream you can
create this lovely little ghost.
I am going to set him over to the side andnow I am going to get started on our next
cupcake which is a brains cupcake.
Because you can’t have Halloween withoutbrains, right?
So I have another little cupcake here withouthis wrapper on and then I have some butter
cream fondant colored with red coloring.
And then what I want to do is put a littlebit on the top. and similar to the Jack o’Lantern
we are just going to bring it to the top anddown the sides.
You want to give him a nice coating all over.
While you are decorating you know, if youfind your butter cream frosting is getting
a little bit warm, pop it into the fridgeor even into the freezer for 2 or 3 minutes
and then that will help you out a lot.
Once your cupcake is covered totally in buttercream frosting I am going to take my pipping
bag, I have got round nose on here and I amjust going to pipe down the center a line,
and then I am going to do squiggles like thisjust like a brain.
Perfect brain cupcake.
Now just to finish this guy off and make hislook really big and bold for Halloween.
I got a little bit of my food die here andI am just going to place it around the brains.
To make it really gory.
I am so proud of how this little guy turnedout.
And all you need is a piping bag and somebutter cream.
Really couldn't be easier.
These three cupcakes are so easy to recreateyourself at home no matter how much of an
experience bold baker you are.
And most important of all they taste greattoo.
Taste just like the fall.
